๐ Ingredients (about 60 pieces)
Fondant & Cherries
60 maraschino cherries with stems, well drained and dried
3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectionersโ sugar
Cannabis-Infused Coating
1 lb (about 450 g) chocolate confectionersโ coating or high-quality dark/milk chocolate
Cannabis infusion:
.5g - .7g RSO or distillate (dose based on strength & your desired potency)
Optional: 1โ2 tbsp coconut oil or cocoa butter (helps distribute the infusion)
Note on dosing: Start with a planned total THC amount you want for the whole batch (e.g., 500 mg THC). If youโre using RSO or distillate with a known THC content (e.g., 800 mg/g), calculate how much to incorporate so your finished batch is dosed how you want per cherry.
๐ช Instructions
1. Make the Fondant & Prep Cherries
Drain cherries and pat them dry thoroughly with paper towels. Moisture can prevent chocolate from adhering properly.
In a mixing bowl, combine the softened butter and corn syrup until smooth.
Gradually stir in the confectionersโ sugar and knead until a soft dough forms.
Wrap about 1 teaspoon of fondant around each cherry, sealing completely.
Place the fondant-wrapped cherries on a wax paperโlined tray and chill in the refrigerator until firm.
2. Prepare Cannabis-Infused Chocolate
Set up a double boiler (heatproof bowl over simmering water).
Chop the chocolate or use chocolate coating pieces and begin melting them gently.
Optional step for smooth infusion: If using RSO/distillate thatโs very thick, warm a small amount of coconut oil or cocoa butter (~1โ2 tbsp) in the double boiler, then add your RSO/distillate. Stir until itโs evenly incorporated into the oil/butter.
Once the chocolate is nearly melted and smooth, remove from heat and stir in your cannabis-infused oil mixture. Mix thoroughly so the infusion is evenly distributed throughout the chocolate.
Tip: Work fairly quickly so the chocolate doesnโt begin to set before itโs mixed.
3. Dip & Set
Holding each cherry by the stem, dip it into the infused melted chocolate, allowing excess to drip off.
Place dipped cherries back onto a wax paperโlined tray.
Once all cherries are coated, chill them until the chocolate is fully set.

Even infusion: Adding cannabis to a small amount of fat (like coconut oil or cocoa butter first) helps it disperse evenly in the chocolate.
No MCT necessary: You can melt the cannabis directly into chocolate, but something fatty helps prevent separation.
Storage: Keep finished cherries in a cool, dry place or the fridge if your room is warm.
Ripening: Classic recipes note that fondant centers soften into a liquid over 1โ2 weeks โ if you can wait, they taste even better!
