Total Time: 35 mins Yield: 4 - 6 servings
🛒 Ingredients
For the Tachos:
1 bag (12–16 oz) tortilla chips
1 lb ground beef (or chicken)
1 packet taco seasoning
2/3 cup water
2 cups shredded Mexican blend cheese
1 cup black beans (drained & rinsed)
1 cup corn (optional)
1 cup diced tomatoes
½ cup sliced jalapeños
½ cup diced red onion
🥑 Infused Avocado Lime Sauce:
2 ripe avocados
½ cup sour cream or Greek yogurt
Juice of 1–2 limes
1 clove garlic
2 tbsp fresh cilantro
Salt to taste
1–2 tbsp water (to thin as needed)
0.1g - 0.2g RSO or distillate (adjust to desired potency)
👨🍳 Instructions
1. Cook the Meat
In a skillet over medium heat, cook ground beef until browned (7–10 minutes).
Drain fat, add taco seasoning + water, and simmer 5 minutes until thickened.
2. Make the Infused Avocado Lime Sauce
In a blender or food processor, combine:
Avocados
Sour cream/Greek yogurt
Lime juice
Garlic
Cilantro
Salt
Blend until smooth and creamy. Add a splash of water if needed for a drizzle consistency.
Infuse it:
Gently warm the sauce slightly (not hot), then thoroughly mix in your RSO/distillate until fully incorporated.
⚠️ Mix extremely well to ensure even dosing throughout the sauce.
3. Build the Tachos
Preheat oven to 375°F.
Spread tortilla chips on a baking sheet. Layer with:
Taco meat
Beans & corn
Cheese
4. Bake
Bake for 10–12 minutes until cheese is melted and bubbling.
5. Load & Drizzle
Pull from oven and top with:
Tomatoes
Jalapeños
Red onion
Then drizzle that infused avocado lime sauce generously across the top.
6. Serve & Enjoy
Finish with extra cilantro, lime wedges, or a scoop of guac if you’re feeling bold.
💡 Pro Tips
Keep the sauce below ~160°F to preserve potency.
For smoother infusion, mix your RSO/distillate with a tiny bit of warm oil before blending in.
Want it spicy? Add a seeded jalapeño into the sauce blend.
