🧂 Ingredients:

For Chicken Skewers

  • 1 lb chicken breast, cut into 1-inch cubes

  • 2 tbsp soy sauce

  • 1 tbsp lime juice

  • 1 tsp garlic powder

  • 1 tsp ginger powder

  • 1 tbsp olive oil

  • 8 bamboo skewers (soaked in water)

For Sweet Chili Infused Glaze

  • ⅓ cup sweet chili sauce

  • 1 tbsp rice vinegar

  • 1 tbsp honey (optional for extra sweetness)

  • 1 full dose of RSO or distillate (e.g. 80mg for 8 skewers = 10mg/skewer)

  • Pinch of red pepper flakes (optional for heat)

🔥 Instructions:

1. Marinate the Chicken

  • In a bowl, combine soy sauce, lime juice, garlic powder, ginger, and olive oil.

  • Add chicken cubes and toss to coat. Let marinate for 15–30 minutes (or overnight for max flavor).

2. Make the Infused Glaze

  • In a small saucepan over low heat, combine sweet chili sauce, rice vinegar, and honey.

  • Stir constantly until warm (do not boil).

  • Remove from heat, then whisk in your RSO or distillate until fully incorporated.

  • Set aside.

3. Assemble and Cook Skewers

  • Preheat grill or stovetop grill pan to medium heat.

  • Thread chicken onto soaked skewers (about 4–5 pieces per skewer).

  • Grill skewers for 4–5 minutes per side, or until chicken is fully cooked and slightly charred.

4. Glaze and Serve

  • Brush the infused sweet chili glaze over hot skewers right after grilling.

  • Serve immediately, garnished with sesame seeds, chopped green onion, or cilantro.
