🌶️Cluckin’ Chill Skewers🐔💨

🧂 Ingredients:
For Chicken Skewers
- 1 lb chicken breast, cut into 1-inch cubes 
- 2 tbsp soy sauce 
- 1 tbsp lime juice 
- 1 tsp garlic powder 
- 1 tsp ginger powder 
- 1 tbsp olive oil 
- 8 bamboo skewers (soaked in water) 
For Sweet Chili Infused Glaze
- ⅓ cup sweet chili sauce 
- 1 tbsp rice vinegar 
- 1 tbsp honey (optional for extra sweetness) 
- 1 full dose of RSO or distillate (e.g. 80mg for 8 skewers = 10mg/skewer) 
- Pinch of red pepper flakes (optional for heat) 
🔥 Instructions:
1. Marinate the Chicken
- In a bowl, combine soy sauce, lime juice, garlic powder, ginger, and olive oil. 
- Add chicken cubes and toss to coat. Let marinate for 15–30 minutes (or overnight for max flavor). 
2. Make the Infused Glaze
- In a small saucepan over low heat, combine sweet chili sauce, rice vinegar, and honey. 
- Stir constantly until warm (do not boil). 
- Remove from heat, then whisk in your RSO or distillate until fully incorporated. 
- Set aside. 
3. Assemble and Cook Skewers
- Preheat grill or stovetop grill pan to medium heat. 
- Thread chicken onto soaked skewers (about 4–5 pieces per skewer). 
- Grill skewers for 4–5 minutes per side, or until chicken is fully cooked and slightly charred. 
4. Glaze and Serve
- Brush the infused sweet chili glaze over hot skewers right after grilling. 
- Serve immediately, garnished with sesame seeds, chopped green onion, or cilantro.
