🧂 Ingredients:
For Chicken Skewers
1 lb chicken breast, cut into 1-inch cubes
2 tbsp soy sauce
1 tbsp lime juice
1 tsp garlic powder
1 tsp ginger powder
1 tbsp olive oil
8 bamboo skewers (soaked in water)
For Sweet Chili Infused Glaze
⅓ cup sweet chili sauce
1 tbsp rice vinegar
1 tbsp honey (optional for extra sweetness)
1 full dose of RSO or distillate (e.g. 80mg for 8 skewers = 10mg/skewer)
Pinch of red pepper flakes (optional for heat)
🔥 Instructions:
1. Marinate the Chicken
In a bowl, combine soy sauce, lime juice, garlic powder, ginger, and olive oil.
Add chicken cubes and toss to coat. Let marinate for 15–30 minutes (or overnight for max flavor).
2. Make the Infused Glaze
In a small saucepan over low heat, combine sweet chili sauce, rice vinegar, and honey.
Stir constantly until warm (do not boil).
Remove from heat, then whisk in your RSO or distillate until fully incorporated.
Set aside.
3. Assemble and Cook Skewers
Preheat grill or stovetop grill pan to medium heat.
Thread chicken onto soaked skewers (about 4–5 pieces per skewer).
Grill skewers for 4–5 minutes per side, or until chicken is fully cooked and slightly charred.
4. Glaze and Serve
Brush the infused sweet chili glaze over hot skewers right after grilling.
Serve immediately, garnished with sesame seeds, chopped green onion, or cilantro.
