🌶️ Green Chile Highway BBQ Sauce

🛒Ingredients

  • 1 cup ketchup

  • ½ cup apple cider vinegar

  • ¼ cup New Mexico honey

  • ¼ cup brown sugar

  • ½ cup roasted Hatch green chile, finely chopped

  • 1 tbsp New Mexico red chile powder

  • 1 tbsp Worcestershire sauce

  • 1 tbsp yellow mustard

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • ½ tsp ground cumin

  • ¼ tsp black pepper

  • Pinch of salt

  • 1 tbsp unsalted butter or coconut oil

  • 100mg to 200mg RSO/Distillate

Step 1: Build the Sauce

In a medium saucepan, combine:

  • Ketchup

  • Apple cider vinegar

  • Honey

  • Brown sugar

  • Green chile

  • Red chile powder

  • Worcestershire sauce

  • Mustard

  • Garlic powder

  • Onion powder

  • Smoked paprika

  • Cumin

  • Salt and pepper

Whisk thoroughly.

Step 2: Simmer

Bring to a gentle simmer over medium-low heat.

Cook for 15–20 minutes, stirring occasionally, until slightly thickened.

Remove from heat.

Step 3: Cool Slightly

Allow the sauce to cool for 5–10 minutes. The sauce should be warm but not actively simmering.

Step 4: Add the Infusion

Melt the butter or coconut oil and mix in your RSO or distillate until smooth.

Whisk the infused butter/oil into the BBQ sauce until fully incorporated.

Step 5: Rest

Let the sauce sit for 15 minutes before serving to allow flavors to meld.

Serving Ideas

  • Brush on smoked ribs during the last 15 minutes of cooking.

  • Toss with pulled pork for a New Mexico-style sandwich.

  • Glaze grilled chicken thighs.
