🌶️ Green Chile Highway BBQ Sauce

1 cup ketchup
½ cup apple cider vinegar
¼ cup New Mexico honey
¼ cup brown sugar
½ cup roasted Hatch green chile, finely chopped
1 tbsp New Mexico red chile powder
1 tbsp Worcestershire sauce
1 tbsp yellow mustard
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
½ tsp ground cumin
¼ tsp black pepper
Pinch of salt
1 tbsp unsalted butter or coconut oil
100mg to 200mg RSO/Distillate

Step 1: Build the Sauce
In a medium saucepan, combine:
Ketchup
Apple cider vinegar
Honey
Brown sugar
Green chile
Red chile powder
Worcestershire sauce
Mustard
Garlic powder
Onion powder
Smoked paprika
Cumin
Salt and pepper
Whisk thoroughly.
Step 2: Simmer
Bring to a gentle simmer over medium-low heat.
Cook for 15–20 minutes, stirring occasionally, until slightly thickened.
Remove from heat.
Step 3: Cool Slightly
Allow the sauce to cool for 5–10 minutes. The sauce should be warm but not actively simmering.
Step 4: Add the Infusion
Melt the butter or coconut oil and mix in your RSO or distillate until smooth.
Whisk the infused butter/oil into the BBQ sauce until fully incorporated.
Step 5: Rest
Let the sauce sit for 15 minutes before serving to allow flavors to meld.
Serving Ideas
Brush on smoked ribs during the last 15 minutes of cooking.
